François Chidaine is a talented and passionate winemaker, who after years of working in the family business, in 1989, decided to acquire his own vineyards and start his own winery in Montlouis-sur-Loire. His estate today covers almost 45 hectares of vineyards, distributed mainly in the Montlouis-sur-Loire appellation, with plots in Vouvray and Touraine. Since 1992 the company has converted to organic regime and in 1999 it switched to biodynamic. The Sauvignon Blanc grapes are sourced from vineyards located in the municipalities of the Cher Valley, such as Chissay-en-Touraine and Saint-Julien-de-Chédon on clay-limestone soils. The harvest is manual and the fermentation occurs spontaneously with indigenous yeasts at low temperatures. The wine is then refined on its lees before bottling. This Touraine Sauvignon Blanc is a dry and lean white wine. It has a clear and brilliant straw-yellow color. Its aromatic profile is fresh and delicate with aromas of citrus, white fruit, and wildflowers. On the palate, it is lively and juicy with excellent acidity. It has a light body and a fresh finish. It is perfect with grilled fish and seafood salads. Served chilled, it also makes an excellent aperitif.
